Instructions

Pat the chicken dry, season both sides with salt and pepper.

Sear the chicken in olive oil over medium-high heat, about 4 minutes per side. Move to a plate.

Add diced onion and garlic to the pan and cook until soft, about 3 minutes.

Stir in the rice and toast for 1 minute, then pour in the broth and scrape up the browned bits.

Nestle the chicken back in, cover, and simmer on low for 20 minutes.

Rest off the heat for 5 minutes, fluff the rice, and shower with chopped parsley.
